Summer Fruit Jam Class with Blue Chair Fruit

This 2-hour introductory class is great for beginner and experienced jam makers alike! Rachel takes you through the jam-making process from start to finish, with a special focus on summer fruits and herbs. We will cook two different jams, a berry and a stone fruit. Our focus will be on base techniques and building blocks of jam making and on understanding how these help determine the end result. We will examine key topics such as how to integrate a secondary fruit into a simple base recipe, the specific importance of sugar and lemon juice, and the stages of cooking. Our class starts with a brief jam tasting and discussion, then proceeds to the cooking process.
You will receive two small jars of jam to take home! We will have copper jam pans, both of Rachel’s cookbooks, and several Blue Chair Fruit jam and marmalade flavors available to purchase during class.
